Australian entrepreneur Pana Barbounis talks about the raw chocolate company, Pana Chocolate, he founded and about his new book of raw chocolate recipes. He brings along some chocolate to taste.

Barbounis founded Pana Chocolate in Melbourne three years ago after his discovery of raw chocolate (chocolate made from beans that have not been roasted). He worked on the products for six months including spells of training in the UK and with Belgian chocolatiers. Pana Chocolate is vegan, organic and refined-sugar-free. It is now sold by 3,000 stores across the world, including many wholefood stores in the UK. Barbounis’s book includes more than 70 recipes, ranging from breakfast dishes of chia pudding, granola, and buckwheat porridge, to children’s party recipes for chocolate crackles and honey joys and traditional desserts.
