World-leading gut scientist and bestselling author Professor Tim Spector talks about his new book, Ferment, his work on diet and health, his efforts in fighting Covid-19 and his leadership of the world’s biggest citizen science project.
Spector rose to public fame during the Covid pandemic when his ZOE Covid symptom Study app was downloaded by millions of people, who entered their symptoms. Researchers used the app to understand Covid-19, slow its spread and study its impact. In Ferment, Spector looks at the life-changing benefits of fermentation. He says the science is now clear that adding fermented foods to our diets brings an amazing amount of health benefit. Spector provides practical tips for buying and making fermented foods and introduces some of his own favourites, including homemade kombucha and kefir, sourdough, miso and coffee.

Spector is professor of genetic epidemiology at King’s College London and an honorary consultant physician at Guy’s and St Thomas’ NHS Foundation Trust. He is an expert in personalised medicine and gut microbiome and ranked by Google as being in the 100 most cited scientists in the world. His books include the bestselling Diet Myth, Spoon-Fed, and Food for Life. He is co-founder of Zoe, a personalised programme that gives insights into how a body responds to food.
